Pour the milk into a large pan. Cut the salmon into cubes and add with the prawns/shrimp to the pan. Bring the milk to the boil and then remove from the heat. Cover the pan and leave for 5 minutes to cook the fish.
Now drain the fish, reserving the liquor, and place in the base of the pie dish with the sweetcorn.
Next, melt the butter in a clean pan. Add the flour and mix to form a paste. Cook over a low heat for 1 minute.
Then gradually stir in the reserved liquor and keep stirring until the sauce is smooth. Increase the heat and stir the sauce until it is really thick, about 2 minutes.
Now stir in the wine and add the mushrooms. Simmer for 3 minutes.
Season to taste and add the dill.
Pour the sauce over the fish and give everything a good stir so the sauce coats the fish and vegetables. Leave to cool slightly, about 10 minutes.
Trim the pastry to fit the top of the pie dish.
Dampen the rim of the dish with water and use the trimmings to cover the rim of the dish.
Now dampen the rim of pastry with water. Cover the pie dish with the large piece of pastry pressing down around the rim of the dish to seal the pastry. Knock back the edges.
Make 2 holes in the top to allow steam to escape during cooking.
Brush the top of the pastry with egg glaze.
Place on a baking tray and bake in the centre of the oven for 25-30 minutes until the pastry is golden.
565g (1 lb 4 oz) salmon fillet, skinned and cut into 4 portions
450g (1 lb) baby potatoes (about 9)
450g (1 lb) cherry tomatoes
20 black olives, pitted (optional)
3 tbsp olive oil
1½ tsp herbes de Provence
salt and freshly ground black pepper
You will also need a large heavy based baking tray/sheet.
Preheat the oven to 200°C (400°F) (gas 6).
While the oven is heating up, place the baking tray/sheet in the oven to get hot.
Brush the hot tray/sheet with a little olive oil.
Now toss the potatoes in a small bowl with 1 tablespoon of the olive oil and a little salt. Then spread on the baking tray/sheet and roast for 17 minutes.
Meanwhile, brush the salmon pieces with a little olive oil and sprinkle with ½ teaspoon of herbes de Provence. Season.
After the potatoes have been roasting for 17 minutes, turn them, leaving a space in the centre of the tray/sheet. Now lay the salmon pieces in the centre and then return to the oven for 10 minutes.
While the salmon and potatoes are in the oven, slice the courgettes/zucchinis into 1.25cm (½ inch) rounds and put in a bowl. Add the tomatoes, olives (if using), the remaining olive oil, and herbes de Provence. Season. Now toss to coat.
After the salmon has been baking for 10 minutes, remove the tray/sheet from the oven, turn the potatoes again and spread all the vegetables around the salmon. Return to the oven and continue cooking for a further 10 minutes until the tomatoes are just starting to burst but still holding their shape and the salmon is cooked through.
3 eggs, large (U.K.)/extra large (N.A.), yolks only
170g (6 oz) butter, cut into small cubes (¾ cup, or ½ stick)
1 tbsp chopped parsley
1 tbsp chopped chives
salt and freshly milled black pepper
baby potatoes and green beans
You will also need a large shallow frying pan/skillet with lid
This is one dish where everything needs to be prepared before starting to cook.
First, have four plates warming in the oven.
Now, cut four slices from the lemon and then juice the remainder.
Lay the salmon fillets side by side in the shallow pan/skillet.
Add the lemon slices, bay leaf, and peppercorns.
Cover the salmon with cold water and add the lid.
Now bring the water to a boil and then remove the pan/skillet from the heat and leave for 5 minutes to finish cooking the salmon. Then, using a fish slice, lift the salmon from the pan/skillet and transfer to the warmed plates in the oven.
Meanwhile, add the lemon juice to a small pan along with the vinegar.
Bring to a boil and then let it bubble rapidly over a medium heat until it has reduced by half. It will reduce very quickly so you need to watch it. Immediately pour into a small bowl and leave to cool a little. (You need to pour it from the pan immediately to prevent the heat from the pan reducing the mixture further.)
Next bring a little water to a gentle simmer in another pan.
Whisk together the egg yolks in a bowl that will fit over the pan of simmering water and add the cooled vinegar and lemon juice.
Place the bowl over the pan and add the butter, one cube at a time, whisking until it has melted. Continue whisking until all the butter has been added and the sauce has thickened.
Once the sauce has thickened, remove the bowl immediately from the heat and stir in the herbs. Season.
Pour the sauce over each fillet and serve with the vegetables.
This is one of my favourite fish pies which is really good to serve to guests as it looks so scrumptious and different when baked. Filo pastry keeps it light and is used in a decorative way as a topping. The herby cream cheese filling which is added to cubes of salmon and prawns/shrimp is so smooth and delicious too.
You will need a 20cm (8 in) loose-bottomed flan tin, 3.75cm (1½ inches) deep, buttered, and a baking sheet. Also a deep sided frying pan/skillet.
Preheat the oven to 200°C (400°F) gas 6.
Pop the baking sheet in the oven to heat up while preparing the pie.
Now bring some water to the boil in the frying pan/skillet. It will need to be deep enough to cover the salmon. Then add the salmon and bring back to the boil. Immediately remove from the heat, cover the pan/skillet and leave for the water to poach the salmon, about 2–3 minutes, until it is just cooked.
With a slotted spoon, remove the salmon and leave on a plate to cool completely.
Meanwhile, beat together the crème fraîche, cream cheese, eggs, herbs, and seasoning until the mixture is smooth.
Take two of the sheets of pastry, cut them in half to give four sheets. Brush one sheet with melted butter, then lay a second sheet on top, rotating it slightly so the edges don’t line up. Brush this sheet with melted butter. Now lay a third sheet on top, again rotating it slightly, and brush with butter. Lay the fourth sheet on top, slightly rotated.
Lift the pastry layers and line the flan tin, gently pressing the pastry down into the tin. The edges of the pastry should extend over the rim. Now brush the top layer of pastry with melted butter.
Brush the remaining piece of pastry with melted butter and put to one side.
Place the salmon cubes over the pastry and then add the prawns/shrimps.
Pour over the cream mixture.
Now bring the edges of the pastry up over the the filling around the edge, leaving it roughly scrunched up.
Tear the remaining piece of pastry into long strips. Scrunch these up and use them to cover the exposed filling.
Place the flan tin on the hot baking sheet and loosely cover with foil. Then bake in the oven for 25 minutes.
Remove the foil and continue baking for a further 5 minutes until the pastry is crisp and turning golden in colour.
Remove from the oven and let rest for 10 minutes for the filling to set.
Now carefully lift the pie from the tin but leave on the base. Let it cool for 2 minutes then gently slide off the base.
Serve cut into wedges along with a green salad.
Filo pastry dries out very quickly, so keep it covered until it is needed to be used.
As the pastry does not contain any fat it can be refrozen. Remove the packet from the freezer to thaw, keeping it covered. Then when the pastry is needed, unroll it and remove the 3 sheets. Now carefully roll the pastry back up, return it to its wrapping and place back in the freezer.
For this recipe you will need a large frying pan/skillet with lid and a 2.25 litre (4 pint) ovenproof dish
Preheat the oven to 190°C (375°F) (gas 5).
Peel and cut potatoes into large chunks. Cook in boiling, salted water for about 20 minutes until tender. Drain and set aside.
Meanwhile, cut the broccoli into bite-sized florets, about 115g (4 oz) (1 cup). Not all the head of broccoli will be needed.
Remove the stalks from the dill and reserve. Chop dill leaves and put to one side.
Now lay the salmon in the frying pan/skillet and pour over the water and wine. Add the seasoning, dill stalks, and lemon slices. Cover the panskillet. Bring the liquid slowly to the boil, then reduce the heat and simmer gently for 5 minutes or until the fish is just cooked.
Remove from the heat and discard the dill stalks and lemon slices. Using a slice, lift the fish and lay it in the ovenproof dish. Flake into chunks using a fork and check for bones.Then strain and reserve the cooking liquor.
Now scatter the prawns/shrimps and broccoli over the fish.
Next melt the butter in the frying pan/skillet and stir in the flour to form a smooth paste. Remove from the heat and slowly add the reserved cooking liquor, stirring constantly, until the sauce is smooth. Return to the heat and bring to the boil. Then reduce the heat and cook for a further minute, while continuing to stir, until the sauce has thickened. Stir in the cream. Add the chopped dill leaves and season. Now pour the sauce over the fish.
Mash the potatoes, adding just enough milk to create a creamy mash. Season well. Cover the fish with spoonfuls of the potato. Don’t flatten the spoon shapes out as you are after a bumpy look.
Then sprinkle with the breadcrumbs and pour the melted butter over the top.
Bake for 40–45 minutes until piping hot and lightly browned.
A fish dish that is full of flavour and looks very colourful on the plate.
Salmon brushed with butter and lemon juice is then roasted and served sitting on a bed of buttery spinach with buttery tomatoes alongside. Slices of potato are roasted until crisp to complete the dish.
large bag (plastic container) baby leaf spinach, about 500g (18 oz)
a dash of white wine vinegar
You will also need a roasting tin/pan for the potatoes and an ovenproof dish large enough to lay the fish in a single layer.
Preheat the oven to 200°C/400°F/gas 6.
For the potatoes
Peel and cut the potatoes into even-sized pieces. Place in a pan and cover with water. Bring the water to the boil and then simmer for 7 minutes. Drain and leave for a few minutes until the potatoes are cool enough to handle.
Now thickly slice and add to a large bowl. Season, add the oil and toss to coat. Tip into the roasting tin/pan and roast for 30 minutes, turning a couple of times.
For the fish
Lightly oil the ovenproof dish, add the fish and brush with the melted butter. Season and then squeeze the lemon juice over the top. Bake in the oven, uncovered, for 18 minutes.
For the tomatoes
Tip the tomatoes into a small pan and bring to the boil. Reduce the heat and let the juice bubble for 5 minutes to reduce.
Now gradually stir in the cubes of butter over a low heat and then add the sugar. Season to taste.
For the spinach
Melt the butter in a large pan and add the spinach leaves. Cook until just wilted, about 3 minutes.
Next stir through a dash of white wine vinegar, then tip into a colander and press out the liquid.
Divide the spinach among four serving plates and place a salmon portion on top. Spoon the tomatoes around one side of the fish and the crispy potatoes on the other.
Put the potatoes in a large pan of cold salted water, bring to the boil, and cook for 20 minutes, until tender.
Add the eggs during the last 10 minutes (saves on another pan!). Once the eggs are ready, remove from the pan and run them under cold water. (This will prevent a dark rim forming round the yolk while they are cooling.)
Drain and mash the potatoes with 28g (1 oz) (⅛ cup, or ¼ stick) of the butter and a little milk, until creamy. Set aside.
Next, melt the rest of the butter in a pan and, once foaming, tip the pan and quickly add the flour. Stir to form a smooth paste and cook over a low heat for 2 minutes. Warm the milk (a microwave makes this quick) and gradually stir into the roux until smooth. Stir in the wine. Bring to the boil and then reduce the heat and gently cook for 5–10 minutes until the sauce is very thick, stirring constantly. (The sauce needs to be very thick because once the fish is added and cooks in the sauce, its juices will thin it.) Add the lemon juice, salt and pepper and a good grating of nutmeg.
Now cut the fish into bite-sized chunks and mix into the sauce with the spinach. Spoon into the ovenproof dish.
Peel the eggs, carefully cut into quarters and scatter them evenly over the top of the fish.
Cover with the mashed potato and sprinkle with the cheese.
Cover the dish with foil and cook in the oven for 20 minutes. Remove the foil then cook for a further 10–15 minutes until the top is golden and the sauce is bubbling around the edges.

900g (2 lb) potatoes, (6 medium)
4 tbsp olive oil
2 garlic cloves, finely sliced
6 plum tomatoes, halved, OR
12 tinned/canned plum tomatoes*
4 x 170g (6 oz) salmon fillets, skinned
20 black olives, pitted (optional)
salt and freshly ground black pepper
150ml (5 fl oz) dry white wine (⅔ cup)
2 tbsp lemon juice
knob of butter
basil leaves to garnish

You will also need a 2.4 litre (4½ pint) ovenproof dish for this recipe.
Preheat the oven to 200°C (400°F) (gas 6).
Peel and cut the potatoes into even-sized large pieces. Then parboil in boiling, salted water for 10 minutes. Drain and leave to cool for about 5 minutes until they become cool enough to handle. Now cut into 5mm (¼ inch) slices.
Brush the dish with 1½ tablespoons olive oil. Then layer the potato slices in the dish and drizzle over another 1½ tablespoons of the oil. Spread the garlic slices over the potatoes and top with the tomatoes. Drizzle with the remaining one tablespoon oil, season and bake in the oven for 40 minutes.
Ten minutes before the end of cooking, start preparing the salmon fillets. Slash each salmon fillet three times across the top and season. Heat a large non-stick frying pan/skillet and add a good sized knob of butter. When the butter begins to sizzle, lay the salmon fillets in the pan/skillet and sear for one minute on both sides.
Remove from the pan/skillet and lay the salmon fillets on top of the potatoes. Scatter with the olives (if using), and pour the wine and lemon juice over the fish. Then cover with foil and return to the oven for a further 15 minutes.
To serve, garnish with basil leaves and accompany with a green vegetable.
Preparation time: 15 minutes plus 30 minutes for the pastry case

For the shortcrust pastry
225g (8 oz) plain flour/cake and pastry flour (2 cups less 2 tbsp)
pinch of salt
55g (2 oz) butter, chilled and cubed (¼ cup, or ½ stick)
55g (2 oz) lard, chilled and cubed (¼ cup)
3 tbsp ice cold water
For the filling
55g (2 oz) rocket/arugula
140g (5 oz) cooked salmon fillet OR
1 tin/can wild red pacific sockeye salmon, drained and any skin and bones removed
2 eggs, large (U.K.)/extra large (N.A.)
240ml (8 fl oz) crème fraîche (1 cup)
salt and ground black pepper
23cm (9 inch) quiche tin (a solid tin with a loose base)
For the pastry
Sift the flour and salt into a mixing bowl. Rub in the butter and lard until the mixture resembles breadcrumbs. Sprinkle over the water and gently bring together. Tip onto a work surface and lightly knead into a ball. Wrap in cling film/wrap and chill for 20 minutes.
Roll out the pastry onto a floured work surface slightly larger than the quiche tin. Lift carefully into the tin, pressing the pastry down into the edges using the edge of your index finger. Run the rolling pin over the top of the tin to remove the excess pastry. Prick the base using the tines of a fork and return to the refrigerator to chill for a further 20 minutes.
Preheat the oven to 200°C (400°F) gas 6
Line the pastry case with baking parchment and fill with baking beans. Bake in the oven for 15 minutes then remove the baking beans and parchment. Return to the oven for a further 5 minutes.
Remove from the oven and leave to cool.
For the filling
Reduce the oven temperature to 180°C (350°F) gas 4
Remove the pastry case from its pan and carefully transfer to a baking sheet.
Roughly chop the rocket/arugula, discarding any thick stalks, and spread over the base of the pastry case.
Flake the fish and scatter on top of the rocket/arugula.
Now beat the eggs and crème fraîche together, using a hand held electric mixer, until combined. Then season. Gradually pour into the pastry case.
Bake for 30 minutes until the mixture has just set.
A very simple fish dish that takes less than 15 minutes to prepare and 20 minutes to cook. Salmon fillets are baked with freshly squeezed orange juice and dotted with butter. The result – a lovely buttery orange sauce to complement the salmon.
This dish is good served with Creamy Garlic Potatoes (recipe below) and fine green beans.
If accompanying the salmon with the Creamy Garlic Potatoes, prepare the potatoes first. Then, when they have gone in the oven, prepare the salmon. Put the salmon in the oven 10 minutes after the potatoes have gone in. Everything will then be ready at the same time.
an ovenproof dish, well greased
Preheat the oven to 200°C (400°F) (gas 6).
Lay the salmon fillets side by side in the ovenproof dish. Dot with the butter and pour over the juice of 1 orange, then season.
Cover with foil and bake on the middle shelf of the oven for about 20 minutes, until salmon is firm to the touch.
Thinly slice four pieces from the second orange, then cut each slice with one cut from the centre to the edge. Twist either side of the cut in opposite directions and place each one along the top of each fillet. Garnish with dill and serve with the orange butter sauce poured over the fish.
Prepares: 4 servings for a light supper and 6 for a lunch

340g/12 oz potatoes, peeled and cut into equal sizes
25g/1 oz butter
2 x 213g cans red Pacific salmon
1 tbsp fresh parsley, chopped
salt and pepper
milk to bind
1 egg, beaten
50g/2 oz fresh breadcrumbs
oil for frying
Put the potatoes in a pan of boiling, salted water and cook until tender, about 20 minutes. Drain.
Cream the potatoes with the butter. Drain the salmon, removing any bones and skin and then mix into the potatoes with the parsley. Season to taste and bind with a little milk. Shape into 8 cakes for a light supper or 12 for a lunch. Chill for 15 minutes to firm up.
Put the egg in a shallow bowl and spread the breadcrumbs over a plate. Dip the fish cakes in the egg and then coat with the breadcrumbs. (You may need more egg and breadcrumbs if you are making 12)
Heat a little oil in a pan over a gentle heat and cook the cakes for about 5 minutes until golden brown. Turn and cook for a further 5 minutes. Garnish with parsley.
After they have been coated with the egg and breadcrumbs, open freeze them until hard then pack in a container, seal and return to the freezer. To thaw, place on a tray, cover loosely, and leave at room temperature for about 3 hours. Cook as above.
